Crispy zucchini chips made in an air fryer are coated with a tasty blend of panko and parmesan, then perfectly air-fried. This is a healthier alternative to a traditional dish!
Who doesn’t enjoy a dish of crispy fried zucchini? Especially when it’s made with panko. I certainly do! It ranks high among my preferred appetizers when dining out. However, let’s face it, indulging in it often feels a bit guilty, right?
Those crunchy bites are, after all, fried in oil. That’s what gives them the satisfying crunch we adore. But now, you can treat yourself to this delicious snack with less guilt.
These air-fried zucchini fries are incredibly crispy. They are so flavorful. And the best part? There is absolutely NO oil. None whatsoever!

What ingredients are required?

ZUCCHINI:

Use a medium zucchini sliced into rounds that are about a quarter inch thick. Yellow squash can also work well.

FLOUR:

All-purpose flour is suitable. Gluten-free flour is an option too.

PANKO:

This ingredient adds the fantastic crunch to the zucchini. If you need to, gluten-free panko can be used as a substitute.

PARMESAN CHEESE:

I simply adore the combination of parmesan and zucchini together. The cheese also contributes a touch of saltiness.

DRIED BASIL:

Basil pairs wonderfully with zucchini! Since you’ll be air frying, use dried basil rather than fresh for this recipe.

GRANULATED GARLIC:

I prefer granulated garlic since its coarseness helps prevent it from clumping, unlike garlic powder. If you have garlic powder, you can use that instead. Just skip the additional salt if you opt for garlic salt (even salting the zucchini beforehand). SALT & PEPPER

EGG/WATER:

This mixture will help the panko adhere.

How do you prepare zucchini chips in the air fryer?

To achieve perfectly coated zucchini, you should cover each piece first with flour, then with egg, and finally with the panko. The flour allows the egg to stick, while the combination of flour and egg creates an ideal surface for the panko.
The easiest way to set up this process is to arrange three separate plates: one for flour, one for the egg mixture, and one for the panko.

STEP 1:

Slice the zucchini into rounds that are approximately a quarter inch thick. Season both sides with salt and pepper.

STEP 2:

Dip the zucchini chips in flour, ensuring both sides are coated by pressing gently.

STEP 3:

In a bowl, whisk together egg and water. Then, take the zucchini coated in flour and immerse it in the egg mixture.

STEP 4:

Mix panko breadcrumbs, parmesan cheese, basil, and granulated garlic together. Press the zucchini into the seasoned panko to ensure both sides are coated.

STEP 5:

Arrange the zucchini in a single layer in the air fryer. Cook at 375 degrees Fahrenheit for 12 minutes, turning them halfway through.

DES’ TIP:

You might want to prepare this in smaller portions to keep the air fryer from getting too full. Place the cooked zucchini on a dish in an oven set to warm.
This method is perfect if you prefer to prepare zucchini fries instead. Just slice the zucchini into sticks.
You will truly enjoy how wonderfully crunchy these Air Fryer Zucchini Chips are. They are also very tasty! I found I didn’t need any dip, but my husband preferred a creamy ranch dip. A quick garlic aioli would work well too.
