This creamy dip made with Brussels sprouts, garlic, and white cheddar cheese is truly transformative! This straightforward recipe will turn anyone into a Brussels sprouts enthusiast!
Hey everyone, I have a goal. It’s called “Get Everyone to Enjoy Brussels Sprouts. ” With this Creamy Roasted Brussels Sprouts Dip, I might just have done it. If you know someone who is unsure about trying Brussels sprouts, this dip is bound to win them over!
Believe me when I say this Brussels Sprouts Dip is the ideal starter for any of your holiday gatherings, game days, or whenever you crave a bit of cheesy comfort food.

Brussels Sprouts Dip Ingredients:
BRUSSELS SPROUTS:
I prefer using fresh brussels sprouts for this recipe rather than frozen ones, as they provide a better crunch and texture. These are a less pungent type of onion. They add a mild onion taste to the dip without being overpowering.
BACON:
I suggest chopping it into small bits and then frying it, but you can also fry it whole and crumble it later.
GARLIC:
When I first created this dip years ago, I used Tillamook Garlic White Cheddar Cheese. Sadly, that cheese isn’t available anymore, so I had to adapt the recipe. I opted for white cheddar and fresh garlic instead, and it turned out great.
MAYONNAISE:
This ingredient will help hold everything together. Don’t worry; you won’t taste the mayo, but it improves the texture.
SOUR CREAM:
It gives the dip a nice creamy and tangy flavor.
WHITE CHEDDAR:
For the best melting results, I advise using cheese that you shred fresh yourself.
Step-by-Step Photos and Instructions:
- Roast Brussels Sprouts
- Cook bacon until it’s crispy.
- After cooling, chop the Brussels sprouts.
- Mix all the ingredients in a bowl.
- Transfer to a baking dish and bake.
Step 1:
Start by roasting the Brussels sprouts. By doing this first, the dip won’t take as long to bake. Plus, roasting gives them crispy edges, which are fantastic in this dip! After roasting, chop them roughly.
Step 2:
Cook bacon until it’s brown. I add bacon to this recipe because it enhances the flavor.
However, if you’re preparing this for vegetarian friends, you can skip it. The dip will still be delicious!
Step 3:
In a bowl, mix together the roasted Brussels sprouts, bacon, cheddar cheese, sour cream, mayonnaise, and shallots. Stir until well combined.
Step 4:
Pour the mixture into a small baking dish and bake until it’s golden and bubbly.
What pairs well with this dip?
I once prepared it as a side for dinner, and we ended up enjoying the dip more than the main course. It was hard to resist! I served it with crostini, but it would also pair wonderfully with buttery crackers, pita chips, or even fresh veggies.
Possible Variations:
As stated earlier, you can omit the bacon to create a vegetarian version. You may also choose to use mozzarella cheese or a mild cheddar instead. Any cheese that melts well is a good option. However, I recommend avoiding hard cheeses like Parmesan, as they do not melt as well.
